From organically grown grapes in the single cru 140 of Contrada San Paterniano, in Serra de’ Conti, 3,4 acres. Soil enrichment is made with green manure and the soil is left permanently and naturally grassy.
Exposure is North-West; altitude from 320 to 290 m above sea level; soil is mixture of clay and sand.
Manual harvest, de-stemming and gentle press, use of only free-run must, clarification through decanting and spontaneous fermentation with indigenous yeasts selected from the vineyard. No use of sulfites during fermentation or refining, just a little before bottling.
Refining on lees in stainless steel for 6 months and then for 2 months in bottles
When I had to name this wine, I had no doubts it had to be “da solo” (“alone” or “on its own”). On my own I began this new adventure in 2021; as in the vineyard 140 of San Paterniano in Serra de’ Conti alone the grapes have grown, they have bene hand-harvested, they have generated this wine on the north-west slope on top of the hill. On its own the must ferments spontaneously without adding industrial yeasts and with great attention to the addition of sulfites, not used during fermentation but only just before bottling.
A spontaneous wine made with passion and with no compromises; a child of the diversified vineyards that generated it, a wine that comes on its own but that I want to share together with all of you.
